I discovered a turkey leg in my freezer compartment. So I have defrosted it and am slow cooking it until I can pull the meat off the bone. Should be ready in about three hours.
I ran out of butter yesterday and did not want to go out to the shops because it was dark and cold. Just remembered I had a carton of cream left over since Christmas. With a stick blender I made it into butter. The cream separated into curds and whey. I allowed the whey to drain off and the remaining curds became the butter. Delish!
As storm Henry was blowing yesterday, I did not go out to the shops for groceries. Went to the fridge and got some cooking liquid that I had frozen from cooking the turkey leg. Heated it up and put in some Brussels sprouts from my garden also some diced Squash and some quinoa . Cooked for about 10 minutes. It made a delicious meal with a couple of slices of homemade bread..
I always go into "Insomnia" for a fruit slice and a cup of coffee, when I come out of the hairdresser's. Today, for a change, I tried a chocolate peanut butter slice. LOL! I can't eat very rich sweet things! Much as other people like chocolate, I'm afraid I'm not one of them! Yuck!
I have some chicken thighs and a bottle of red wine. Am hoping to cook a chicken casserole that I saw Mary Berry demonstrate on TV. If it's really nice, I'll look for the recipe and post it here.
Only got around to cooking the chicken thighs a la Mary Berry, this evening. Really delicious! It was more like "a la whisker", but still very tasty! The foxes got the bones tonight.
Hubby did the dinner this evening as It as been a bed day for me YUK. Bless him he his no great shakes in the kitchen so I have to take what i can get and be grateful for. Yesterdays Left over potato's fried baked beans and egg. Killing my diet but tasted scrummy
Earlier I fixed up re-fried beans from a can and some pinto beans with some green leafy stuff with onions and Chinese salsa and to be honest the dish that I prepared wasn't all too tasty.
